Golden Oriental Sesame Chicken

Golden Oriental Sesame Chicken

Preparation Time: 10 minutes
Cook Time: 10 minutes
Servings: 20
Ingredients
1/2 cup honey
1/4 cup orange juice
2 Tbs soy sauce
1 envelope GOOD SEASONS Oriental Sesame Salad Dressing Mix
4 boneless skinless chicken breast halves (about 1-1/4 lb.), cut
lengthwise
into 3/4-inch wide strips

Directions;

Mix honey, juice, soy sauce and salad dressing mix in large bowl
until well blended. Reserve 1/4 cup marinade; refrigerate. Add
chicken to bowl; toss to coat. Refrigerate 1 to 4 hours to marinate.
Drain; discard marinade. Thread a skewer through each chicken strip.
Broil 4 inches from heat or grill over medium coals 8 to 10 minutes
or until cooked through, turning and brushing frequently with
reserved 1/4 cup marinade. Discard any remaining marinade. Makes 20

For the truly adventurous: Potato Candies!

I never knew you could make so many desserts from mashed potatoes
until I started searching the net for ideas. Here are just a few that
I found!

Mashed Potato Candy 1 medium potato
1 lb. powdered sugar
1 tsp. vanilla
1/2 lb. coconut
1 giant Hershey Bar

Cook potato and mash fine. Add sugar & vanilla, stir in coconut.
Spread in a flat pan Melt Hershey bar and spread on top

Irish Potato Candy

1 Tablespoon Mashed potatoes
2-1/4 Cups Confectioners' sugar
1 12 oz jar peanut butter

Placed mashed potatoes in a mixer bowl. Add confectioners' sugar one
cup at a time, beating well after each addition. Spread into greased
10 x 15-inch pan. Spread peanut butter over top. Roll as for a jelly
roll. Cut into slices.

Potato Candy Easter Eggs

3/4 cup mashed potatoes
1/2 teaspoon salt
1 teaspoon vanilla extract
3-1/2 cup confectioners sugar
8 ounces semisweet chocolate
1 tablespoon vegetable oil

Prepare an 8-inch diameter round pan with olive oil-flavor non-stick
pan spray. Layer the eggplant and tomatoes in the prepared pan.

Spread the pasta sauce over the vegetables. Cover with foil; bake 20
to 25 minutes, or until the eggplant is fork-tender. Uncover;
sprinkle with mozzarella and top with Parmesan cheese.

Bake, uncovered, at 350 degrees F 15 minutes or until the cheese is
golden brown. Cut into 4 wedges. (1/4 of recipe):

Rise and Shine Peanut Butter Muffins

Rise &Shine Peanut Butter Muffins
Serves 8

3/4 cup water
1 tbsp white distilled vinegar
2/3 cup nonfat dry milk powder
1-1/2 cups all-purpose flour
1/3 cup Splenda Granular
1-1/2 tsps baking powder
1/2 tsp baking soda .
2 tbsps no-fat sour cream
1/4 cup reduced-fat peanut butter
1 egg or equivalent in egg substitute
1/4 cup spreadable fruit (any flavor)

Preheat oven to 375. Spray 8 wells of a 12-hole muffin pan with
butter-flavored cooking spray or line with paper liners. In a small
bowl,
combine water, vinegar, and dry milk powder. Set aside. In a large
bowl,
combine flour, Splenda, baking powder and baking soda. Add milk
mixture,
sour cream, peanut butter, and egg. Mix gently just to combine. Spoon
1
tablespoon batter into each prepared muffin well. Top each with 1/2
teaspoon

spreadable fruit. Evenly spoon remaining batter over top. Bake for 10
to 12
minutes or until a toothpick inserted in center comes out clean.

Who Pudding

At Christmastime, my favorite treat is

something creamy, light, and sweet.

"Who Pudding a la Cindy-Lou!"

And here's the recipe for you.

2/3 cup long-grain (not converted) rice

3 cups milk

3/4 cup sugar

1 teaspoon vanilla extract

2 tablespoons butter

1/2 teaspoon salt 4 eggs, separated

1/8 cup of red and green M&M;'s

Utensils needed:

double boiler,

medium-size mixing bowls,

small-size mixing bowl,

wire whisk,

deep serving dish.

With the help of an adult,

combine rice and milk in top of double boiler.

Cover and cook over simmering water for

30 minutes or until rice is tender.

Preheat oven to 325º F.

Beat egg yolks with a wire whisk until frothy.

Stir 3/4 cup sugar, vanilla, butter, salt,

and egg yolks into warm rice mixture.

Mix well.

Grease a shallow baking dish.

Pour in pudding.

Bake for 35-40 minutes.

Remove from oven and let cool on a

wire rack for 10 minutes.

2 pounds organic potatoes, peeled and sliced thin
2 cloves garlic, minced
2 Tablespoons Eden Extra Virgin Olive Oil
2 large onions, sliced into thin rings
2 cups Edensoy Original, or Edensoy Unsweetened
1 cup water
2 1/2 Tablespoons organic unbleached white flour
1 teaspoon Eden Sea Salt
1/4 teaspoon freshly ground black pepper
1/4 cup fresh parsley, minced
1/2 cup Eden Bonito Flakes, crumbled, optional
1 teaspoon paprika Serves 8

Directions

Preheat oven to 350°. Heat oil in a large skillet and sauté the garlic and onions for 5 minutes. Remove and set aside.
Place the Edensoy, water, flour, sea salt, and pepper in a blender. Pulse several seconds to blend. Add the parsley and mix with a spoon.

AFRICAN SAUCES
Yields 4 to 6 servings

Voodoo Sauce (Africa)

2 cans Chipotle peppers
½ cup Teriyaki sauce
¾ cup Brown sugar

Method- In a food processor, combine and mix all ingredients into a smooth puree.

Voodoo Mustard Sauce (Africa)

1 ½ cups Coleman mustard
7 ½ cups Dijon mustard
3 cups Voodoo sauce (See additional recipe cards)
3 cups Honey

Method- In food processor, combine and mix all ingredients into a smooth puree.

Teriyaki Sauce (Africa)

¾ gallon Sugar
1 gallon Low sodium soy sauce
6 heads Garlic bulbs, peeled and chopped
4 hands Ginger root, peeled and chopped
4 bunches Scallions, white only in ½

Method- Bring all ingredients to a boil in a non-reactive pot and reduce to simmer for 30 minutes.
Strain and keep refrigerated until ready to use.

Yields 4 to 6 servings

Apple Strudel:
¼ cup Bread Flour
1 each Egg Yokes
½ cup Flour (all purpose)

Eggplant Rollups Italian
This unusual and tasty dish uses thinly-sliced eggplant strips rolled into enticing little packages filled with cheeses and Italian herbs and topped with garden-fresh tomato sauce.
This is one tasty and painless way to get kids to eat their eggplant! Adults love these rollups, too.
Serves 8
Filling
1 c grated mozzarella cheese
1/2 c grated parmesan cheese
1/3 c cottage or ricotta cheese
1 egg
1/2 t salt
1/4 t pepper
1/2 t basil or oregano
1 T chopped fresh parsley
Batter
1 egg
2 T flour
1/3 c milk
1 T cooking oil
Other
2 small eggplants
1/4 c cooking oil
2 T butter
flour
1 1/2 c fresh or canned tomato sauce
1. Combine cheeses, egg, salt, pepper, basil or oregano, and parsley. Make smooth paste and chill.

2. For batter, combine egg, flour, milk, and oil, and beat until smooth.

Last week, my book group met at Jill’s house. Now, Jill is justly famous for her Artichoke Dip, a luxury we look forward to with great anticipation every time she hosts the group. But that night Jill made a very different treat for us: a gorgeous jewel-like pie of unbaked fresh fruit--strawberries, blueberries, raspberries, and peaches--nestled in a simple glaze. “Heavenly” doesn’t begin to describe that pie. Most of us could happily have polished off the entire thing ourselves.

Honey Recipe- Lemon Drop Wafers

Lemon Drop Wafers

2 cups flours
1 teaspoon baking powder
1 teaspoon salt
½ cup sugar
1 teaspoon grated lemon rind
½ cup shortening
1 egg
1/3 cup honey

Sift together dry ingredients.
Combine sugar, lemon rind, and shortening, creaming well,
Blend in the egg and honey. Beat well. Add the dry ingredients gradually: Mix thoroughly.

Sweet Potato Tart

SWEET POTATO TART

Makes 1, 10-inch tart

If you are looking for something different, a Sweet Potato Tart
always fits the bill. You can also use canned pumpkin, instead.

Pastry Pie Dough for 1 (9-inch) pie pan or 1 (10-inch) tart shell,
recipe follows 2 cups cooked sweet potatoes, peeled, boiled and drained and mashed (or canned pumpkin puree)

4 eggs
1 cup light brown sugar
1 orange, juiced
1 cup heavy cream
1/2 stick unsalted butter, melted
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon fresh grated nutmeg

Blind bake tart shell for 10 minutes in a preheated 350 degree oven. In a mixing bowl, combine ingredients thoroughly. Pour sweet potato mixture into tart shell and return to 350 degree oven and bake for 25 minutes or until center is set.

Pastry Dough Recipe:
4 1/2 cups flour
12 ounces cold diced butter
2 teaspoons salt
3/4 to 1 cup ice water

In a food processor, combine the flour, butter and salt and pulse

Macaroni and Cheese Casserole - Vegi

Vegetarian Resipe from the, "The Farm Cookbook"Macaroni and “Cheese"

Macaroni and "Cheese" Casserole

Serves 5

Cook 3 ½ cups elbow macaroni.

In a saucepan, melt ½ cup margarine over low heat.

Beat in ½ cup flour with a wire whisk and continue to beat over a
medium flame until the mixture (called a roux) is smooth and bubbly.

Whip in 3 ½ cups boiling water,

1 ½ tsp. salt,

2 Tbsp. soy sauce,

1 ½ tsp. garlic powder,

And a pinch of turmeric,

Beating well to dissolve the roux. The sauce should cook until it
thickens and bubbles.

Then whip in ¼ cup oil and 1 cup of nutritional yeast flakes.

Mix part of the sauce with the noodles and put in casserole dish, and
pour a generous amount of sauce on top. Sprinkle top with Paprika
and bake for 15 minutes in a 350' preheated oven. Put in Broiler for
a few minutes until "cheese" sauce gets stretchy and crisp.

Wait…vegetarian wine? But wine is made of grapes! True, but like white sugar, wine can go through some processing that involves animal products. With wine, the troublesome ingredients come into play during the “finishing,” or the steps that stop the fermentation. The animal-based fining agents are:

* casein - a milk protein
* isinglass - made from fish bladders
* gelatin - made from cow bones
* animal albumin - egg whites and sometimes dried blood powder

Not all wines even require fining, and there are vegetarian clarifying options, like bentonite clay. Luckily, there are loads of companies that keep the animal products out of the finishing process. Here is a great list for tracking down a vegetarian bottle!

Of course, if you want to be really certain that wine is animal free, you can always make your own bottle.

TOFU POT PIE

Have ready one partially baked Pie Shell

Pie Crust:

Mix together in a bowl:

2 cups of flour

1 tsp. salt

Work ½ cup margarine into this with your fingers. Add a scant ½ cup
cold water, stirring as little as possible to form a ball. Divide
into 2 balls and roll out to 1/8" thickness. Prick the pie shell in
the pan with a fork a number of times before baking to prevent
bubbles. For a partially baked shell, bake at 400' for approximately
10-15 minutes (till lightly browned on edges).

For sauce; Combine in a small paper bag:
½ cup flour
2 Tbsp. nutritional yeast flakes
1 ½ tsp. salt
½ tsp. garlic powder

Add 4 cups tofu cut in ½-3/4' cubes and shake.

Whole Wheat "Quick" Bread with Herbs

WHOLE WHEAT "QUICK" BREAD WITH HERBS

1/2 cup white bread flour
1 cup whole wheat flour
1/2 cup regular rolled oats
(not quick-cooking or instant)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup chopped fresh parsley
1/4 cup finely chopped green onion, green part only
2 tablespoons chopped fresh basil
2 eggs, lightly beaten
1 cup low-fat buttermilk
1 tablespoon olive oil

Heat oven to 375 degrees. Spray 9-by-5-by-21/2-inch loaf pan with
cooking spray.
In large bowl, combine both flours, oats, baking soda, salt and
pepper. Mix in parsley, onions and basil.
In small bowl, beat eggs lightly. Mix in buttermilk and oil until
combined well. Add wet ingredients to dry one, mixing just until are
combined. Pour batter into prepared baking pan.
Bake in preheated oven for about 45 minutes or until pick inserted in
center comes out clean. Cool in pan for 10 minutes, then turn out of

Turkeys can be thawed using one of three methods, but the
most fool proof is in the refrigerator. The key to this
method is to plan ahead and allow approximately 24 hours
for every four to five pounds of bird weight for thawing
in the refrigerator. This method is the safest and will
result in the best finished product. Place the bird, in
the original wrapping, on a shallow baking sheet in the
refrigerator. The following chart provides good guidelines
for thawing times.

the bird in COLD water, in the original wrapping. The cold
water must be changed every 30 minutes. Allow approximately

The Cooking Herb Nutmeg

Nutmeg

Nutmeg is another spice that has a variety of healing properties and
can be used in a wide range of dishes during the holidays and all
year long. It is useful for:

Insomnia (nutmeg can produce drowsiness so it should be taken when
you have a chance to relax or sleep)
Anxiety
Calming muscle spasms
Nausea and vomiting
Indigestion
Diarrhea
Joint pain and gout
Lowering blood pressure
Male infertility and impotence
Improving concentration
Increasing circulation
Lowering cholesterol
Toothaches (nutmeg oil)
